| Ingredients |
1 cup Lentils, red 1500 ml Stock 1 x Onions, brown, chopped 4 x Garlic cloves 1 x Carrots, chopped 1 x Lemons, sliced 2 tablespoons Olive oil 2 tablespoons Cumin seeds 3 x Tomatoes, chopped 4 tablespoons Dill 1 sprig Coriander

Cover
lentils in saucepan with stock and bring to boil. Skim well while
cooking, reduce heat and simmer half-covered for 30 minutes. Put onion
and garlic into food processor and chop finely, but do not puree.
Remove and process carrots and then tomatoes. Heat oil in heavy-based
pan, add cumin seeds and heat over medium heat until seeds begin to
pop. Add chopped vegetables and continue frying for 2-3 minutes. Add to
the simmering lentils, season and continue to cook until lentils are
tender, about another 10 minutes. Add more stock if necessary. Just
before serving add the herbs and the lemon slices, bring just to the
boil and switch off. Serve with a thin lemon slice floating in each
bowl. |
