| Ingredients |
1 packet Tofu, hard
1 tablespoon Olive oil
1 bottle Onions, pickled
1 can Tomatoes
2 x Garlic cloves, chopped
1 x Onions, brown, chopped
150 gm Mushrooms
.25 bunch Parsley, chopped
250 ml Stock
2 x Bay leaves
1 sprig Thyme
.5 cup Wine, white
.5 tablespoon Butter
1 pinch Salt, to taste
1 pinch Pepper, ground, to taste

| Method |
Peel
and cut onion, saute in oil until light brown. Set aside. Slice tofu
and dip into plain flour or semolina and fry until light brown. Be
careful not to break up tofu. Add white wine, tomatoes, thyme, bay
leaves. Transfer to casserole dish, add stock, cover and cook in
preheated oven at 200 C for about 15 minutes. Quarter mushrooms and
saute in butter, add drained pickled onions and parsley. Stir into
casserole. Add salt and pepper to taste. Return to oven and cook for
further 10 minutes. |
