| Ingredients |
6 x Tomatoes
4 x Cucumber
1 x Onions, Spanish, large
1 x Capsicums, red
30 ml Lemon juice
.25 cup Vinegar, balsamic
.25 cup Olive oil
.5 x Stock cubes(optional)
1 sprig Parsley
2 x Garlic cloves
1 pinch Salt
1 pinch Pepper, ground

| Method |
Finely
chop tomatoes, cucumber, onions, capsicum and garlic. Place half the
ingredients into a blender and puree. Mix all the ingredients and add
salt and pepper to taste. Keep chilled, add ice cubes before serving. |
