Ingredients 1 x Eggplant, medium, peeled and cut into 1/2" cubes (about 3 cups)
.25 cup Tahini
1 tablespoon Lemon juice
1 x Garlic Clove
.25 tablespoon Pepper Black
1 D Cumin ground
2 tablespoons Sesame seeds
2 tablespoons Parsley, finely chopped, fresh
1 x Parsley sprig
Garnish Garnish with parsley sprig.
Method Steam eggplant until tender, about 8 minutes. Place cooked eggplant in food processor. Add tahini (sesame paste), lemon juice, and garlic. Puree. Stir in remaining ingredients; spoon into serving bowl. Serve warm or chill. Makes 2 cups.
Variations
Comments 1. Smaller eggplants have thinner peels and a sweeter flavor. Select those with firm skin free of soft spots. 2. Store sesame seeds in cool, dark place in refrigerator.
