Guacamole





Name Guacamole Recipe No 50

Ingredients 1 x Avocados, large
1 x Garlic cloves
1 x Onions, brown, small
1 tablespoon Coriander, chopped
.5 x Lemon juice
1 pinch Salt, to taste
1 pinch Pepper, ground, to taste
Garnish Traditionally, guacamole is served with fresh corn chips. Take fresh tortillas, cut into wedges and quickly fry. You may prefer plain savoury biscuits or crudites.
Method Mash all ingredients together, either by hand or very briefly in a blender or food processor. It should have some texture and not be processed into a smooth paste.
Variations Add 1 small, very ripe tomato and/or 1 small chopped chili.
Comments You can also use guacamole for filling tacos or enchiladas. I have also found many uses for leftover guacamole such as a rich addition to salad dressing, or spread on top of pizza prior to baking.
