Cucumber Raita





Name Cucumber Raita Recipe No 47

Ingredients 1 x Cucumber, Lebanese
1 cup Yoghurt
.5 tablespoon Cumin seeds, ground
.5 tablespoon Salt
1 tablespoon Vinegar, cider
1 tablespoon Coriander, chopped
1 pinch Paprika
Garnish
Method Peel cucumber and drain in a sieve. Beat the yoghurt and add remaining ingredients, except for the paprika. Squeeze out the remainder of the cucumber juices. Stir the pulp into the yoghurt mixture. Place in a serving bowl and sprinkle with some paprika. Refrigerate.
