Saffron Rice

Ingredients 1 cup Rice, Bamati, uncooked

Garnish For a festive touch add some silver leaves, available at an Indian grocery shop.
Method Allow 1 cup of uncooked rice for 2-3 persons. Take a few strands of saffron, crush slightly and soak in a little hot water. Allow 2 cups of water, or a little less, for each cup of uncooked rice. You may dry-roast the rice over a medium heat before adding the water. Cover, allow it to come to the boil, then turn the heat down and simmer. Check after 10 minutes, fluff with a fork and replace the lid. If you have an electric stove you may even switch off the element at this stage. Ensure that the rice does not overcook and turn soggy. At any sign of that occurring, stir and continue to simmer uncovered to allow excess moisture to evaporate. When the rice is done, add the saffron with its liquid and stir through. Serve in a bowl or platter.
